Roasted Eggplant

Here’s one that’s good. Think end of summer, early fall garden party. Ina Garten shows up in a 2008 mini coop convertible with a roasted eggplant spread that is divine. All you had to do was show up and you did. 

This one probably won’t win any brackets or make a lot of noise. Sort of like a role player on a solid basketball team. I like to think I was a bit of role player on myself on my 8th grade squad. We even made a splash in the playoffs that year. Could box out hard, foul like hell, make a free throw or two.
